After working alongside the Mental Health Foundation to help get their Tea & Talk campaign off the ground, we held our very own Tea & Talk party on Friday, raising over £300.

We supported the charity event by providing free branded mugs, printed with the ‘Tea & Talk’ logo, which were sent to TV presenters to use on Friday in order to promote the campaign. The concept of Tea & Talk is very straightforward – hold a tea party with your friends, colleagues or relatives and simply have a natter! The campaign is in support of World Mental Health Day, which was yesterday, Sunday 10th October.

Our Tea & Talk party was very cake oriented, with plenty of home made delights to try throughout the day – I will publish recipes for all the favourites (starting below…). In total we raised £320.66, and we hope this contribution will go some way to help the Mental Health Foundation hit this year’s target of £35,000.

It is still not too late to show your support, simply visit teaandtalk.org.uk/tea/

Onto the recipes, the first one I have for you is a delicious shortbread, courtesy of Paula:

Shortbread – Makes 16

200g Butter
100g Caster Sugar
200g Plain Flour
100g Rice Flour

Pre-heat the oven to 160ºC
Beat together the softened butter and sugar in a bowl until pale and fluffy
Add all the flour and mix thoroughly until binded together
Gently knead until soft and comes together in a ball
Take the mix from the bowl and transfer to a baking tray, approximately 12” (30cm) in length, and gently press the dough into place right out the 4 corners
Using a fork, prick the top of the dough and with your forefinger and thumb go around the edges and ‘nip’ together
Gently mark out into 16 shortbread pieces
Place in the centre of the oven for around 40 minutes until golden brown / biscuit colour and firm to the touch
Leave to cool for a few minutes before transferring onto a cooling tray

Enjoy!
